As our bodies transition to the cooler temperatures, it can be hard to maintain the inner warmth that protects us against unwanted sickness. This is where herbs and soup can swoop to the rescue. This soup recipe is curated intentionally with fall in mind. Fall is such a beautiful time of year, but it also comes with challenges. One of them being–illness.

Use the recipe below to nourish yourself and stay healthy during sick season!
WARMING SOUP RECIPE
1 can of chickpeas
2 large sweet potatoes, diced
1 onion, minced
2 carrots, sliced
1 inch of ginger, minced
4 cloves of garlic, minced
1 can of diced tomatoes
1 can of coconut milk
6 cups vegetable or chicken broth
4 cups baby spinach, or regular (destemmed)
1 tsp cumin powder
½ tsp chipotle powder
¼ tsp cayenne powder
¼ tsp cinnamon powder
4 slices of dried astragalus root (slices if possible) put into a small muslin bag
How to Make:
In a large soup pot, saute onions in olive oil until translucent.
Add in garlic, herbs/spices. Cook for 2 minutes, stirring regularly
Add in can of tomatoes, coconut milk, chickpeas, carrots and sweet potatoes and vegetable or chicken broth
Reduce heat, cover soup pot with a top and let simmer gently for approximately 30 minutes
Turn heat off, let cool slightly, and enjoy
Fish out your Astragulus with a ladle. If you want to let it steep for longer, that is great.
